1. Baked Crunchy Okra –
- 500 grams fresh ladyfinger
- Three fourth cup of soy milk
- Half cup cornmeal
- A quarter cup brown rice flour
- 1 tablespoon lemon juice
- One teaspoon garlic powder
- 1 teaspoon salt
- Half a teaspoon onion powder
- One fourth teaspoon cayenne (more or less to taste)
- One-fourth teaspoon ground black pepper
Method of preparation
- Wash and clean the okra and preheat the oven to 47 degrees Fahrenheit.
- Then place the baking sheet in the oven to heat up.
- Make a paste by mixing all the remaining ingredients except the lady finger in a large bowl.
- Stir the okra in this paste until it is well mixed. Then place the paste on the baking sheet.
- Then keep the okra in the oven and bake for 25 to 30 minutes. Slowly rotate each ladyfingers at 15-minute intervals.
- When okra is golden, brown and crispy, serve it with sauces or chutney.
2. Okra-Potato Vegetable –
- 500 gram okra
- 2 chopped potatoes
- 2 tablespoons of oil
- 5 curry leaves
- 2 tablespoons red chilli powder
- 1 teaspoon cumin seeds
- Half a teaspoon asafoetida
- 1 tsp coriander powder
- Salt to taste
Method of preparation
- Add curry leaves, cumin and asafetida to the hot oil and sprinkle.
- Then add chopped potatoes and fry for a while. Then add chopped okra.
- Cook it for 5 to 10 minutes.
- When roasted well, add red chili powder, turmeric, coriander powder and salt.
- Okra-potato vegetable is ready to be served.
